A venerable brewing technique

Kinoko kombucha is made by combining sweetened green tea with a SCOBY, which we ferment for as long as 14 days. The result is a drink that’s lightly sparkling, low in sugar and non-alcoholic.

SCOBY stands for Symbiotic Culture Of Bacteria and Yeast. This culture, that has been used for many centuries in brewing kombucha around the world, is added to the sweetened green tea where it actively builds beneficial compounds.

Making every body happy

Our kombucha contains acids that can help remove dietary pollutants and unwelcome cholesterol. It also contains some ‘clever’ acids that are beneficial to your joints. A mixture of antioxidants is formed, which helps our body with its defences. In addition, the B vitamins, especially B12, can also boost energy levels and the immune system.

Kombucha contains many natural substances that can be beneficial to the body. One is glucuronic acid, which is produced by healthy livers and can be converted into glucosamine and chondroitin sulphate. These have been associated with collagen and the fluid that acts as a lubricant in the joints. Glucuronic acid is also a detoxifying agent, which can bind to toxins in the liver and help flush them out of the body.

 

The levels of tea polyphenols, catechins and other related compounds also increase in the fermentation process. They are recognised antioxidants and present in kombucha. Furthermore, the low pH and certain chemicals in kombucha have been known to have antimicrobial effects.

Our kombucha is not only made with you in mind, but others too. We use only Fairtrade cane sugar and Rainforest Alliance green tea. We add pure, filtered Yorkshire water and entirely natural flavour extracts. The result is a drink that not only tastes good, but is good.
